Originally from the Hunter Valley, Will began his apprenticeship at The Clarence in Dublin, Ireland. He then went on to complete his time at Matthew Kemp’s Restaurant Balzac in Sydney. His next appointment was as Sous Chef at The Royal Mail Hotel in Dunkeld working alongside internationally acclaimed chef Dan Hunter.
Will then took up an opportunity to stage at Rene Redzepi’s Noma in Copenhagen, Denmark, ranked No. 1 on The San Pellegrino Worlds 50 Best Restaurants list. Heading home to Australia, he took on the role of Sous Chef at Brent Savage’s restaurant Bentley in Sydney.
Looking to assume a leadership role, Will moved to Brisbane where he became Head Chef of The Urbane Group overseeing operations at Urbane, The Euro and The Laneway for three years. Will continued to progress his career and was appointed Head Chef of Spicers Balfour, Brisbane.
Will recognised an opportunity to bring his own style to the catering and events market and so established his own business.

Working with the team from Events by William Wallace was a great experience. When Will was given our brief for ‘interactive’ food - he didn't hesitate at the challenge and they took it on board although it was a little out of the ordinary than standard styles of catering. We asked Events by William Wallace to cater for our Client Party. Oh my God, what a feast! Not only for the stomach but also a feast for the eyes, as they created a mouth wateringly beautiful table of delights for us to nibble on.
